- 1 cup silken tofu, drained for about an hour
- 2 Tbs rice vinegar
- 2 tsp dijon mustard
- 2 tsp honey
- 1 Tbs extra-virgin olice oil
- 1 tsp herb blend of your choice (optional)
(a little wasabi is nice, too)
Mix together until creamy. A submersion blender works well.
