Tofu Mayonnaise

(modified from Dr. Weil's Recipe of the Day)

    • 1 cup silken tofu, drained for about an hour
    • 2 Tbs rice vinegar
    • 2 tsp dijon mustard
    • 2 tsp honey
    • 1 Tbs extra-virgin olice oil
    • 1 tsp herb blend of your choice (optional)

      (a little wasabi is nice, too)

Mix together until creamy. A submersion blender works well.
